I’m aware how Iot works, but I really want to undersand it, from scratch the basis, where should I start? (I cannot pay for any courses)

    You can start with esp8266. You can interface sensors to ESP8266 and send data over internet to cloud like thinkspeak. You can learn it from YouTube.
